My wife, Lily made me a delicious meal tonight that is pretty lean and healthy, so at the last minute I thought I would be helpful and send this to you.
Guiltless Lamb Stir Fry
Total Preparation Time: Under 20 Minutes
Serves: 2-3 People (Double recipe for larger parties)
Ingredients:
300 Grams Thin-Sliced Lamb or Fatty Beef
3 Large Spicy Green Peppers
1/2 Red Onion
5 Cloves Fresh Garlic
3 CM section of Fresh Ginger
Ground Black Pepper
Ground Cumin (optional)
1tsp Almond Butter (may substitute: Finely Crushed almonds, organic peanut butter, or sesame butter)
Soy Sauce
2 Cups uncooked Brown Rice
Prep (approx 10 mins):
1. Wash the brown rice, and cook it in a rice cooker. Add about 40% more water than you use for white rice to make the rice fluffy.
2. Remove the seeds from the peppers. Crush and peel the garlic. Wash and coarsely chop the onion, green peppers, and ginger. Mix all into a bowl and set it aside.
3. Pour one tablespoon of soy sauce into another bowl, and add the almond butter (or substitute) and stir for one minute. Set the sauce aside.
Cooking Instructions (8 minutes):
1. Heat a dry wok over a high flame.
2. After the wok is hot, add the lamb or fatty beef. No need to oil the wok. The fat from the meat will act as cooking oil.
3. After you see the juice from the meat in the wok, add the bowl of vegetables and herbs.
4. Cook uncovered under a high flame for 3 minutes, stirring throughout the cooking process
5. After 3 minutes, add the sauce to the wok. Cook uncovered under a high flame for another 3 minutes.
6. During this 2nd 3 minutes, shake your ground cumin and black pepper over the stir-fry. Dust the food with the spices according to your preferences of spiciness.
Presentation:
Serve the stir fry over brown rice.
